Fresh Corn Tamales, With Roasted Pasilla Peppers , Bacon , Cheddar and Fried Quail Egg

Basic Fresh Corn Tamale Batter
Yield : Makes 16 Tamales


  • 4 cups Frozen Corn Kernels
  • ½ Cup White Onion
  • 1.5 Cup Chicken Stock
  • 1.25 Cup Butter Melted
  • 2 Cup Corn Meal
  • 1 tbsp Shortening
  • 2 Tsp Garlic Chopped
  • 1 tsp Salt
  • 1tsp Pepper
  • 1 tsp Sugar


    1.  Blend in Robocoupe
    2. Steam 12 mins and hold as required

Spamcakes with Maple Bacon Gravy and Roasted Apples

Serves 3-4
Total Cook Time 15 minutes


Spamcake batter:


  • 1 tbsp canola oil
  • 1 can Spam (halved and sliced to approximately 1/8″ thickness)
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp cane sugar
  • 1/2 tsp ground black pepper
  • 1/4 tsp cayenne pepper
  • 2 large eggs
  • 3/4 cup whole milk
  • 2 tbsp canola oil
  • 1 pinch salt


  1. Heat oil in a large pan on medium-high heat.
  2. Add Spam slices and cook until browned on both sides, approximately 1 minute per side.
  3. Remove from pan and let cool on paper towel to absorb any excess grease.
  4. Cut into desired size and set aside until ready to combine with batter.
  5. In a large bowl, whisk together the next 5 ingredients.
  6. Add the wet ingredients to the bowl and whisk again until a batter forms.
  7. (Note: if mixture is too thick, add a bit more milk. If it is runny, add some more flour)
  8. Add spam slices to batter.
  9. Heat either butter or oil in a large frying pan on medium-high heat.
  10. Once the pan is hot, ladle some of the batter into the pan, making the pancakes as small or large as you’d like.
  11. Cook until the batter starts to form bubbles around its edges. Flip and continue to cook for about 1-2 minutes.
  12. Transfer to plate and serve immediately, or keep warm in a baking dish (covered) in the oven on a setting of 225 degrees.


  • 2 cups prepared gravy
  • 1/3 cup good quality maple syrup
  • 5 strips cooked bacon strips (roughly chopped)
  1. Place all ingredients in a small pot and bring to a simmer on medium-high heat.
  2. Once simmering, reduce to low heat and keep warm until ready to serve.

Roasted apples:

2 Spartan apples (cored, halved, roasted and thinly sliced (if you’re unsure how to roast an apple, god bless your soul…) )


Alternate spamcakes with roasted apple slices and finish off with an ample amount of bacon gravy. Done annnnnd done!

Where would we be without pancakes during the Calgary Stampede! These breakfast favourites can be served up traditional, or add Double Smoked Bacon, Instant Apple and Oats or Frozen Blueberries to mix it up!



  • Flour            375 ml
  • Sugar             30 ml
  • Baking Powder        10 ml
  • Salt            5 ml
  • Milk            250 ml
  • Eggs            2 each


  1. Measure out all the dry ingredients and add to a medium bowl.  Whisk all dry ingredients together.
  2. Measure the milk and eggs and whisk well together.
  3. Add the wet ingredients into the dry ingredients and whisk together until incorporated into a batter.
  4. Let stand for 10 minutes (allows batter to become light and fluffy).
  5. Heat pan to about 350˚F.
  6. Add butter and using an ice cream scoop add 3 scoops to pan and allow to continue cooking.
  7. Looking for golden brown edges around pancake and bubbles exposing through the top of the pancake before you flip over.
  8. Allow pancake to continue cooking until the underside of the pancake is golden brown.

Seasonal Fruit Parfait

This makes a delicious, healthy breakfast, lunch or snack. It’s ideal for a
quick, high energy meal whether at home or on the road. Just choose your
favourite toppings!


  1. 500 ml organic plain yogurt, full fat variety (use coconut yogurt for dairy free)
  2. Optional toppings: (1-2 tbsp of each)
  3. dried cranberries, chopped
  4. raisins
  5. dates, chopped
  6. rolled oats, whole
  7. hemp seeds (use sunflower or pumpkin seeds for variety)
  8. cinnamon
  9. honey or maple syrup
  10. pomegranate


  • Serve each family member ½ cup of yogurt. Have each person add their favorite toppings and mix them into the yogurt.
  • Be sure everyone chooses at least:
    – 1 Tbsp Fruit (for fibre and complex carbohydrates)
    – 1 Tbsp Nuts or seeds (for protein and healthy fats)
    –  1 or 2 Tbsp oats (for carbs and fibre)

Tip: If eating on the go, take the toppings in a separate container and add when you
are ready to eat.
Seasonal Tip: Use fresh fruits in the summer and fall, dried fruit in the winter.
