Recipe Remix: Coq au Vin

This recipe uses leftover chicken to make a delicious Coq au Vin which comes together in a fraction of the time it would take to cook the original recipe.

Ingredients:

  • 1 whole barbecued/baked chicken or 2 cooked chicken thighs, 2 legs, 2 breasts (or any combination of them)
  • 1 cup raw bacon, chopped
  • 1 cup onion, diced
  • 1 tablespoon olive oil
  • 2 cups cremini mushrooms, halved
  • 3 garlic cloves, minced
  • 1 tablespoon flour
  • 1/4 cup cognac
  • 2 cups red wine
  • 1/2 cup chicken stock
  • 2 teaspoons tomato paste
  • Salt & Pepper to taste
  • 5 sprigs fresh thyme
  • 1 sprig fresh rosemary

Directions:

  1. Remove any skin from the chicken and set the meat aside.
  2. In a large pot, heat the bacon, onions, mushrooms and olive oil over medium heat. Cook for 5 minutes or until the bacon is crispy, mushrooms nicely browned and the onions are translucent.
  3. Add the garlic and flour and cook for 1-2 minutes.
  4. Add the cognac & red wine to deglaze the pan (there should be lots of bits stuck to the bottom of the pot) then add the chicken stock, tomato paste, salt & pepper, thyme and rosemary and bring to a boil.
  5. Turn the heat down to low and simmer for 5-10 minutes until thickened.
  6. Discard the thyme and rosemary.
  7. Serve on its own or alongside potatoes and other veg.

Recipe Remix: Quick Spanish Paella

Paella is one of those dishes which is so versatile and came be made with almost any type of meat. For this mixed variety I have included chicken, chorizo sausage and prawns which seams to satisfy all tastes. The chorizo gives it just enough heat without being overpowering. The ultimate short cut in this dish is to use Spanish style rice which is already seasoned, but if you are using plain white rice, I would recommend adding a can of diced tomatoes to the mix.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 cups chorizo sausage, sliced
  • 1 pound chicken breast, sliced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon chili powder
  • Salt & pepper to taste
  • 1 1/2 cups Spanish style rice (or short grain rice)
  • 3 cups chicken stock
  • 1 cup raw prawns,
  • 1 cup frozen peas
  • 1 lemon, cut into wedges
  • 1 cup parsley, chopped

Directions:

  1. In a large skillet, heat the olive oil over medium heat and add the onion, bell pepper, chicken and sausage.
  2. Cook for 5 minutes until the meat is browned and the veggies are soft.
  3. Add the paprika, thyme, chili powder and salt and pepper and stir.
  4. Next add the rice and chicken stock and bring to a boil.
  5. Lower to simmer and cook for 10 minutes, stirring,until the rice is almost done.
  6. There should be some liquid remaining in the pan.
  7. Add the prawns and frozen peas and stir to combine.
  8. Cover with a lid and simmer for 5 minutes until the prawns are cooked.
  9. Serve with a squeeze of lemon and fresh parsley.

Ingredients

  • 1/4 cup (50 mL) lemon juice
  • 2 tbsp (30 mL) lemon zest
  • 2 tbsp (30 mL) olive oil
  • 1/2 tsp (2 mL) each sea salt and pepper
  • 4 bone-in, skin-on chicken breasts or thighs
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp (30 mL) dried oregano
  • 1 tbsp (15 mL) chili flakes
  • 1 1/2 cups (375 mL) USA long grain brown rice
  • 1 1/2 cups (375 mL) chicken broth
  • 1/2 cup (125 mL) dry white wine
  • 4 cups packed baby spinach
  • 1/2 cup (125 mL) crumbled feta
  • 1/4 cup (50 mL) chopped parsley

Method:

  1. In a bowl, combine 2 tbsp lemon juice, 1 tbsp zest, 1 tbsp oil, salt and pepper and chicken.
  2. Marinate in refrigerator for 30 minutes to 1 hour.
  3. Heat a large Dutch oven or deep skillet over medium high heat, sear chicken pieces on both sides to a golden brown; remove to plate.
  4. In same pot sauté onion, garlic, oregano and chili flakes with 1 tbsp oil until onions are softened, stir in rice. Add broth, wine and remaining lemon juice; bring to a boil. Stir in spinach, reduce heat to a low simmer and top with chicken pieces. Cover with a tight fitting lid and cook for 40-45 minutes undisturbed until chicken juices run clear and rice is tender.
  5. Stir in 1 tbsp zest, feta, oregano and parsley just before serving.

Makes 4 servings

Chicken Thighs and Chorizo Ragout

Ingredients

  • 8 boneless skinless chicken thighs
  • 2 tbsp. all-purpose flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tbsp. vegetable oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tsp. chili flakes
  • 17.5 oz. diced tomatoes
  • ½ cup white wine
  • ½ cup chicken stock
  • 1/3 cup tomato paste
  • 2 tbsp. chopped fresh parsley
  • 2 tbsp. capers, drained
  • ¼ cup Nicoise olives
  • 1 cup dry chorizo sausages diced to ¼” dice

Method:

  1.  Toss chicken with flour, salt and pepper.
  2. In large shallow Dutch oven (or large shallow pot), heat half of the oil over medium high heat; brown chicken, in batches and adding some of the oil if necessary. Transfer to plate and reserve. Drain excess fat from pan.
  3. Heat remaining oil in pan over medium heat. Add onions, chorizo and garlic. Sauté until tender, approximately 3-4 minutes. Add chili flakes and stir. Deglaze with white wine.
  4. Stir in tomatoes, chicken stock and tomato paste. Bring liquid to a boil.
  5. Add capers, olives and portion of chopped parsley. Check for seasoning in this point and adjust if necessary.
  6. Return chicken and any juices to pan. Reduce heat and simmer until thickened and juice run clear when chicken is pierced, about 30 minutes.
  7. Sprinkle with parsley. Transfer to serving dish and serve with pappardelle.

Pappardelle

Ingredients

  • 17.5 oz. uncooked pappardelle
  • 2 tbsp. butter
  • 1 cup grated parmesan cheese
  • 2 tbsp. chopped parsley
  • Salt and pepper

Method:

  1. Heat large pot with salted water. Bring to a boil and cook pappardelle noodles following manufacturer’s instructions.
  2. In mean time heat large frying pan and add butter.
  3. While butter is melting, transfer cooked noodles to a frying pan with butter and toss well.
  4. Season with salt and pepper and add grated parmesan cheese
  5. Add chopped parsley and toss well. Transfer to a serving bowl and serve with chicken.

Whole Grilled Cornish Hen with Roasted Baby Potatoes

Cornish Hen

PREP:

  1. With a pair of kitchen shears, make cuts starting from the back cavity of the hen towards the front on both sides of the back bone to fully remove back bone. Once removed you can start to open the bird.
  2. Make small cuts very gently with a sharp boning or paring knife between the rib cage and the breast meat leading towards the center of the bird. Repeat on both sides until the rib cage and breast bone pull away from the meat.
  3. After you will start removing what’s left of the back bone attached to the thighs using a similar method of cutting between the bone and the meat of the thigh on both sides.
  4. From here we make incisions on both sides of the thigh bone to remove the bone.
  5. Once incisions are made then you will have to just pop the thigh bone out by twisting until it pops out of the socket. Now we are ready to prepare the bird to grill.

Marinade

INGREDIENTS:

  • 3 Cloves Crushed Garlic
  • 1 Lemon Zested
  • 2 Tbsp Olive Oil

PREP:

  1. Mix all ingredients together and rub all over the inside of the bird. Minimum 2 hours and for best results marinate over night.
  2. After marinating 9 pat dry) place skin down on the grill for the marks (about 5 min on high heat) then turn and grill another 8-10 min on medium heat until bird is fully cooked.

Potatoes

INGREDIENTS:

  • 2lbs Baby or Nugget Potatoes
  • 3 Stems of fresh Rosemary
  • 1 Lemon for the Peel and for Seasoning
  • ½ Tbsp Salt
  • 2 Tsp Pepper
  • 2 Tbsp Butter
  • 1 tbsp Honey

Tinfoil

PREP:

  1. Make a pouch out of the tinfoil large enough to hold the ingredients listed.
  2. Start off by lining the bottom with the rosemary.
  3. Lay the washed potatoes on top of the rosemary and add the rest of the ingredients on top of the potatoes.
  4. Close the pouch and place on the grill for about 30-45min at medium heat.
  5. Potatoes should be fork tender and finish by squeezing half the peeled lemon.

Grilled Watermelon Salad

INGREDIENTS:

  • 1 Watermelon
  • ½ Cup Feta Cheese (Crumbled)
  • 1 Cup Loose Arugula
  • 1 Lemon
  • ½ Tbsp Olive Oil
  • Salt and Pepper To Taste

PREP:

  1. Brush the watermelon with olive oil and grill on an angle high heat for 30-40 seconds just for grill marks.  Remove and place on plate.
  2. Dress Arugula with the leftover olive oil, lemon and salt.
  3. Place arugula over the grilled watermelon and top with crumbled feta.

Blueberry Mango Colada Salad

Ingredients:

  • 2 cups fresh blueberries
  • 2 mangos, peeled, seeded and sliced (about 1-3/4 cups)
  • 1/4 cup frozen piña colada mix, thawed
  • 1 tablespoon dark rum (optional)

To Make:

In a large bowl, combine blueberries, mangos, piña colada mix and rum. Into 4 martini glasses or dessert dishes, spoon fruit mixture, dividing evenly. Garnish with blueberries, mango slices and thin lime slices threaded onto long toothpicks, if desired.

Lemon Blueberry & Chicken Salad

Ingredients:

· 2 cups fresh or frozen blueberries, divided
· 3/4 cup low-fat lemon yogurt
· 3 tablespoons reduced-calorie mayonnaise
· 1 teaspoon salt
· 2 cups cubed cooked chicken breasts
· 1/2 cup sliced green onions (scallions)
· 3/4 cup diagonally sliced celery
· 1/2 cup diced sweet red bell pepper

To Make:

Reserve a few blueberries for garnish. In a medium-sized bowl, combine yogurt, mayonnaise and salt. Add the remaining blueberries, chicken, green onions, celery and bell pepper; mix gently. Cover and refrigerate to let flavors blend, at least 30 minutes. Serve over endive or other greens garnished with reserved blueberries and lemon slices, if desired.
Yield: 4 portions (about 5 cups)

Chicken Souvlaki Pitas

This quick and easy recipe provides all the enjoyment of souvlaki without all the work of assembling skewers. Serve with a crisp dark-green leafy salad on the side.

 

 

Ingredients

  • 1 tbsp (15 mL) butter
  • 2 garlic cloves, minced
  • 1 onion, halved and thinly sliced
  • 1 tsp (5 mL) dried oregano
  • Salt and pepper, to taste
  • 1 lb (450 g) boneless skinless chicken breast, cut into 1-inch (2 1/2 cm) pieces
  • 2 tbsp (30 mL) all-purpose flour
  • 1 1/2 cups (375 mL) Milk
  • Grated zest of 1 lemon
  • 8 3 1/2-in (9 cm) whole wheat pitas or
  • 4 6-in (15 cm) whole wheat pitas
  • 1 cup (250 mL) diced English cucumber, (about 1/4)
  • 1/2 cup (125 mL) plain yogurt
  • 2 chopped tomatoes


Directions

  1. In a large skillet, heat butter over medium-high heat. Add garlic, onion, oregano and 1 mL (1/4 tsp) pepper and sauté for about 3 minutes or until softened and starting to brown. Add chicken and sauté for about 5 minutes or until lightly browned.
  2. Whisk flour into milk and whisk into skillet; stir in lemon zest. Cook, stirring often, for about 5 minutes or until sauce is thickened and chicken is no longer pink inside. Season to taste with salt and pepper.
  3. Meanwhile, toast or heat pitas. In a bowl, combine cucumber and yogurt. Spoon chicken and sauce on top of pitas in open-face style, dollop with cucumber yogurt and sprinkle with tomatoes.
